Because stereotypes are puro pedo. "Mexican" stereotypes don't fit 98% of the Mexican population. They're there to enforce an idea and reinforce the belief that Mexicans should be an "undercl." It's also got to do with acculturation and cl. People from higher economic cles tend to fit into those stereotypes you listed as "white" because in the US, that's what the majority of the wealthy people are. Don't use stereotypes to associate yourself with certain people, by doing that you are only reinforcing the racism that underlies those negative stereotypes.
